Pie tempts the county tastebuds

A landlord hopes his a new pie will become a signature dish for Nottinghamshire.

Mr Roy Wood, owner of the Waggon and Horses public house, Halam, has created a meat pie.

He said: “I did some research into it and I realised that Nottinghamshire did not have a signature dish so I took it upon myself to try and create one.”

The pie features slow-cooked slices of beef and leek in a thyme gravy topped with mashed potato and a Colston Basset stilton cheese crust with breadcrumbs.

Mr Wood has named the dish the Nottinghamshire Pie.

Mr Wood said he always sourced his food produce locally and the ingredients for the pie were no exception.

He said:” I’ve chosen the particular ingredients because I thought they went particularly well together.

“The beef is from Nottinghamshire cows, the leeks and potatoes are from a farm in Kirklington and the breadcrumbs are from a bakery in Farnsfield.”

Mr Wood, who was born in Kirkby-in-Ashfield and has been a chef for 20 years, runs the pub with his wife, Mrs Laura Wood.

He said: “Firstly, I wanted to make a nice pie and secondly, I wanted to try and produce something for the county that could be sourced locally and simple enough so anyone could make it at home.”

Mr Wood started selling his Nottinghamshire Pie last week and so far has served more than 200 portions.

He said: “It is selling really well. One in every three meals we sell in the pub is now a Nottinghamshire Pie.”

Mr Wood said he hoped other public houses and restaurants in the area would pick up on the idea of the Nottinghamshire Pie and start selling it county-wide.
